avocado toast

I pretty much live on avocado toast. It's a fast and healthy meal that I eat just about every day for lunch. Grab a slice of your favorite bread, mash up some avocado and then get creative with toppings. Here are some of my favorite ways that I prepare my avocado toast!

roasted chick peas

I am a big snacker (its kinda a problem) so I am always looking for ways to snack a little healthier! One of my favorites is roasted chick peas (or garbanzo beans). Once roasted they have a nutty flavor, are crispy and can be sprinkled with all kinds of herbs and spices to add even more flavor.

    INGREDIENTS

    1 can of chick peas (most grocery stores have them labeled as garbanzo beans)
    Olive oil
    Your favorite herbs, spices and flavoring (salt, curry, paprika, dried or fresh herbs, etc)
    Start by draining the chick peas.
    Place them on a paper towel to soak up any excess water.
    Transfer them to a bowl and drizzle olive oil. Mix until coated with oil.
    Pour onto a baking sheet.
    Bake at 400 degrees for about 10-15 min or until they are crispy.
    Cover with seasoning while they are still warm.

They are SO delicious (Lucy even loves them!) and perfect to eat alone or great for adding some crunch to a salad entrĂ©e.
