lemon blueberry frozen yogurt

I love ice cream but I am still trying hard to eat a little healthier when it comes to eating sweet treats. This summer I have been making simple frozen yogurt with seasonal fruit and thankfully it satisfies my sweet tooth! My current favorite flavor is lemon blueberry (with a hint of mint).

INGREDIENTS:
1 pint of frozen blueberries
1 lemon squeezed
1 dash of fresh mint diced (optional)
1-2 tablespoons of honey
1/2 cup of plain yogurt

Add all ingredients to a food processor and blend together until creamy.
Server immediately OR transfer yogurt to a airtight container and store in the freezer.

We do the same in our home. We are so lucky to have so many local farmers with amazing fruit each summer so I take them and turn them in to healthy alternatives for our littles!!
