roasted chick peas

I am a big snacker (its kinda a problem) so I am always looking for ways to snack a little healthier! One of my favorites is roasted chick peas (or garbanzo beans). Once roasted they have a nutty flavor, are crispy and can be sprinkled with all kinds of herbs and spices to add even more flavor.

    INGREDIENTS

    1 can of chick peas (most grocery stores have them labeled as garbanzo beans)
    Olive oil
    Your favorite herbs, spices and flavoring (salt, curry, paprika, dried or fresh herbs, etc)
    Start by draining the chick peas.
    Place them on a paper towel to soak up any excess water.
    Transfer them to a bowl and drizzle olive oil. Mix until coated with oil.
    Pour onto a baking sheet.
    Bake at 400 degrees for about 10-15 min or until they are crispy.
    Cover with seasoning while they are still warm.

They are SO delicious (Lucy even loves them!) and perfect to eat alone or great for adding some crunch to a salad entrée.

  3. Dry, organic chickpeas are cheap and easy to prepare. Put a cup in enough water to cover + a quarter inch or more. Soak overnight. Simmer until tender, about 30 minutes to an hour.

    Better than canned.

  4. We eat these all the time. They are soooo good. We use nutritional yeast (usually at natural food stores) and it gives it a little cheesy flavor. But I never thought to try other spices. Can't wait to try them!!!!

  8. Another quick and tasty snack is raw coconut flakes toasted then sprinkled with salt and cinnamon. So yummy and so healthy!

  10. Roasted Chickpeas, how simple and yet tasty! I like roasted potatoes but this is definitely healthier and a great substitute for unhealthy food choices. I would try it instead of popcorn in front of the TV.
