homemade ice cream sandwiches

All of a sudden it got really hot here in San Diego and the best treat to beat the heat...homemade ice cream sandwiches! Making your own, while a little time consuming is SO much better than buying them.

I started by making cookies and a really quick and easy way to make yummy cookies is with cake mix-

1 box of cake mix in any flavor- I used chocolate
1/2 cup of vegetable oil
2 eggs

Drop onto an ungreased cookie sheet and bake at 350 degrees for 8-10 minutes.

When the cookies are finished, it's time to fill with ice cream!

Let the ice cream sit at room temperature for a couple of minutes to soften up.

Spread on the surface of the cookie.

I crumbled up butterfinger candy bars and rolled the sides of the ice cream to cover in crumbles.

I made enough for a week - just wrap and freeze!

  7. looks soooooo yummy....reminds me of the "death by chocolate" we used to make...layers of choc cake, choc pudding, choc cool whip and crushed butterfingers.... heaven...

  12. OH those look so yummy. Thank you. I do have a question however. In the recipe you list ingredients as white cake mix, eggs, and oil. There is no chocolate ingredient yet your cookies are chocolate looking. Did you use cocoa or something else?

  13. mmmm YUM! My grandma used to make those when I was a kid. Whenever we would visit, we would sneak to her deep freeze to see if any were in there. Then if there were, we would wait (impatiently) for her to offer us some. Which always seemed like forever!

    Now that I am an adult, I'm sure she was just teasing us to see how long we could stand waiting. There was no way she hadn't heard the squeaky door on the freezer open and close! :-)

  14. That is just cruel! I am trying to NOT eat anything after 6 PM this week, and after looking at your photos, I am sure I need to make those. And Butterfinger? My next-to-favorite candy bar.

    If I'm going to cheat, I better dig out an orange or celery and save your recipe for a treat this weekend.

  15. ummm..YUM!! These look SOOOOO good! I think I will have to make some of these! Funny thing is, I've seen a couple recipes on some sites and have thought of making them and after seeing these, it's a must!

  16. Those look so yummy, and I love the ease of a boxed mix! I've only done coolwhip cookies with a boxed mix.

    This should be on our list of things to do for next week.

    Another idea is, to use homemade rice krispie treats as the "sandwich" part, and roll them in mini M&M's.
